Ingredients

1 whole turkey (approximately 8-11 lbs)
4 dried guajillo chiles, 2 dried ancho chiles and 2 dried pasilla chiles, 3 cloves of garlic, 1 tablespoon of ground cumin, 1 tablespoon of dried oregano
1 teaspoon ground black pepper, ½ teaspoon ground cloves
½ cup apple cider vinegar, 2 tablespoons vegetable oil, salt to taste
Instructions

Start by deveining the guajillo, ancho and pasilla chiles.
To do this, remove the stems and seeds from the chillies and then soak them in hot water for about 15-20 minutes, until they are soft.
While the chiles soak, cut the turkey into smaller pieces, such as thighs and breasts. This will make it easier to coat the meat with the marinade.
While the chiles are soaking, you can prepare the marinade.
It’s time to use the blender

In a blender, combine the drained chiles, garlic cloves, ground cumin, oregano, black pepper, ground cloves, apple cider vinegar and a pinch of salt.
Mix everything until it is smooth and well mixed.
Pour the marinade over the turkey pieces and make sure they are well coated.
Place the marinated turkey in a container and refrigerate it for at least 4 hours, or even better, overnight so it absorbs the flavors well.
